Countable/uncountable noun

Climate is countable or an uncountable noun? Or is it both? The example for both would be 'coffee'.
Uncountable: I like to drink coffee. Countable: three coffees please

Typing "different climates linguee" gives a lot of examples where climate can be countable.

three coffees originally meant three cups of coffee.
