    Sometimes the matter to choose such or so likely turns perplexing.....example
    They are such \so charming people, we have never met before.
    it looks the rules sometimes are the same.

    They are such \so charming people, we have never met the like of them before.
    So applies to the adjective: He is so charming ! I have never met so elegant a man !
    Such applies to the noun : I have never met such a fool ! I have never heard such nonsense !
    You can have such applying to a noun qualified by an adjective.
    I have never met such a man ! I have never met such an elegant man ! I have never met such men ! I have never met such elegant men !
    Your sentence works this way:
    I have never met so charming a man / I have never met so charming people. In my memory, the plural one was considered incorrect or awkward.
    I have never met such a charming man ! I have never met such charming people ! Usual pattern !

    I somehow agree with you but let me discuss
    The result as I see ...
    ..............SO ----------------------------------------- .. SUCH..........
    (1) I have never met so charming a man ..... I have never met such a charming man.
    (2 )I have never met so charming people I have never met such charming people.
    Still to ask
    my first question is they are such \ so charming people .... let me say now for example:
    The people who are our latest neighbours are so charming. or are such charming neighbours.
    Thus, it seems to me making slight changes in the sentences can help you, let me say, to do something behind the rules.

    You could say ! They are so charming, these new neighbours ! ok.
    But I have never met so charming people is wrong for me. I have never met such charming people would be the accepted version.
    Again, in the singular, you can afford to stress:
    the adjective :I have ever met so tall a man.
    the overall impression, the noun : I have never met such a tall man.
    Again, I have never met so tall men sounds wrong to me.
